Chili lime pork lettuce wraps have got to be one of the easiest lunches I’ve ever created, and I’m pretty sure these would rank up there at restaurant quality.

The original recipe I created years ago called for celery and carrots in the mix too, but I wanted to make this both a bit more low carb, and I didn’t feel like chopping all those vegetables. If you’re up for a small dice on some celery and carrots and don’t mind a couple extra carbs, then feel free to add them in with the onions, just update your nutritional values.

I prefer pork over beef in this recipe because, honestly, I think pork has more flavor. Take a chance and switch things up with beef, chicken, or even ground turkey if the mood strikes. Or, if the case may be, use what you have on hand.

Huy Fong chili paste is my favorite chili paste and I always have a bottle of it in my fridge. It’s what I used to make this recipe, so adjust if you need to. With that said, you can’t go wrong with the makers of Sriracha sauce. Rooster sauce will always reign, but since chili paste has fewer carbs it’s the direction I take on this recipe.

  1. Brown ground pork over medium heat, drain. Add onions and cook until onions are tender and transparent. Stir in the garlic and cook a minute longer.

  2. Stir in chili paste, lime juice, and salt. Let simmer approximately 5 minutes for flavors to meld and juice to reduce.

  3. Serve pork mix in butter head lettuce leaves.
