These amazing little balls of indulgent dark chocolate gratification have gotten me through some tough spots. Such as when the rest of the family treated themselves to cheesecake or impulse purchased cookies. I grabbed one of my cheesecake bites and the urge to grab a sugary dessert subsided.

The decision to make chocolate hazelnut cream cheese bites

I created this recipe when I did because when I purchased a bag of cacao chips online to make keto chocolate chip cookies, I instead received a bag of cacao chips that had melted into a solid block.

Instead of making something with cacao chips, I made something that required melted chocolate so I could use the entire block. Thus, chocolate hazelnut cream cheese bites were born.

Notes on the cacao

I used the whole 8oz bag of cacao because I wasn’t in the mood to break it into exact measurements. Yes, I know I could have used my kitchen scale. But, I was grumpy because my plan for sweets changed and wanted to just create. With that said, these cheesecake bites are a bit more dense than I would have liked. They are also extremely rich with an extra dark chocolate flavor. While my intention was for something a bit fluffier like cheesecake, the denser texture actually worked for me.

I’ll be experimenting with some different ratios of ingredients on this recipe because I promised a friend I’d recreate this to drop the carbs even more while using liquid stevia. If you drop the amount of cacao or create these with any substitutes or measurement adjustments I’d love to hear about your results in the comments.

Ingredients

Instructions

  1. Add cacao chips, cream, stevia, and coconut oil in a microwave safe bowl and melt using 30 second intervals at half power, stirring between each round. If you don't want to use the microwave you can use a double boiler on the stovetop.

  2. Once melted combine the cacao mix with cream cheese until fully incorporated. Fold in the nuts.

  3. Roll into 28 approximately 1 inch balls. Roll each ball in additional keto safe sweetener, cacao powder, a blend of the 2, or hazelnuts as desired. 

  4. Store in refrigerator.

Cheesecake bites will be soft immediately after creating them, with more of a cheesecake consistency. After refrigeration they tend to firm up more.
