
Broccoli Bacon and Cheddar Salad
Broccoli, bacon, and cheddar tossed together with a homemade creamy Italian dressing is a salad that can stand alone or partner with just about any main dish.
Combining some of my favorite keto staples, broccoli, bacon, cheddar, and creamy Italian dressing, was a no brainer. The flavors are all complimentary, and the creamy dressing brings it all together. It’s the perfect dish for lunch, or as a side for a backyard BBQ.

Broccoli Bacon and Cheddar Salad
Broccoli, bacon, and cheddar tossed together with a homemade creamy Italian dressing.
Ingredients
- 4 c broccoli chopped to bite sized florets
- 1/4 c red onion minced
- 4 oz cheddar cheese cubed
- 4 slices bacon
- 1/4 c mayonnaise
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tbsp parmesan cheese grated
- 1/4 tsp sea salt
- 1/4 tsp oregano
- 1/2 tsp minced garlic
- 1/4 tsp basil
- 1/4 tsp black pepper
Instructions

Fry or bake bacon to your crisp/chewy preference, then chop or tear into bite sized pieces.

In a small bowl mix mayonnaise, vinegar, parmesan cheese, salt, pepper, oregano, garlic, and basil.

In a medium bowl combine broccoli, onion, cheddar and bacon. Pour dressing over broccoli mix, and toss to coat salad evenly. Refrigerate for at least an hour or until ready to serve.
