Being out of chicken wings isn’t an ideal situation, but, sadly, it happens. When a buffalo chicken craving hits and there aren’t any wings in sight, creativity is required. In my case, lettuce wraps were the answer since I had ground chicken, buffalo sauce, and romaine on hand.

Enjoy the buffalo chicken mix sans lettuce to reduce messy hands.

The blue cheese isn’t overpowering in the mix, but you can taste it, add more if you want or add some as a garnish if you want a stronger blue cheese flavor.

Cook the celery a bit longer if you don’t want the crunch, although I think the crunch a highlight of the recipe, giving a nod to the tradition of celery as a side for hot wings.

Increase fat and fiber with a side of avocado.

Ingredients

  • 1 lb ground chicken
  • 1/2 c Frank's buffalo sauce
  • 1/2 c blue cheese crumbled
  • 3 celery stalks diced
  • Romaine lettuce leaves

Instructions

  1. Brown chicken in skillet over medium heat, drain excess liquid. Mix in buffalo sauce, blue cheese and celery. Heat until cheese is melted but celery is still crisp. Serve as is or on lettuce leaves.
