A rice skillet dish has always been a go to comfort food for me. On keto I can’t have rice. Rather than sacrifice one of my favorite foods, substituting cauliflower rice makes this dish low carb friendly and perfect for a keto diet.

Adjust the vegetable amounts to reduce the carb load if it’s too high for your needs. Also, if you’re not a fan of sausage, try adding shrimp or chicken and it will be just as delicious.

Ingredients

  • 2 tbsp olive oil
  • 1 red pepper diced
  • 1 c onion diced
  • 4 c fresh broccoli florets
  • 1 pkg polish sausage sliced
  • 1 tsp minced garlic
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 4 c riced cauliflower
  • 2 c cheddar cheese shredded

Instructions

  1. Heat oil in a large skillet over medium heat. Add red pepper and onion, cook until onion begins to become transparent. Add broccoli. Cover and cook for a few minutes until broccoli begins to become tender. Add Polish sausage, cook until sausage is heated through.

  2. Add garlic, salt, pepper, and riced cauliflower. Once heated, stir in cheddar and heat until melted.
