A Polish Sausage and Egg Scramble is flavor-filled and an excellent choice for breakfast, lunch, or dinner.
Breakfast for dinner is always a good idea.
Unfortunately, everyone in the family have different ideas about what it should look like. The kids want pancakes, while my husband and I are usually in the mood for a savory dish. This time I suggested a sausage and egg skillet, but the kids didn’t want it. So, we made both; pancakes for the kids, the skillet for the adults.
The ground sausage originally intended for the skillet wasn’t on hand, however we did have polish sausage. It was a small change, but in my opinion made the dish even better.
Remove the vegetables and polish sausage from the skillet prior to scrambling the eggs to avoid the egg coating them. I wanted the egg, vegetables, and polish sausage to retain their individual flavors while still collaborating to make a delicious dish. Not to mention, it gives the skillet a cleaner, brighter, more appetizing appearance.
Omit tomatoes in this dish if desired, however they add a sweet, freshness, plus a nice pop of color.

Melt 2 tbsp butter in large skillet over medium heat. Add peppers, onion, olives and garlic. Cook until peppers and onions are tender, add sausage. When sausage is cooked through pour sausage and pepper mix into a bowl and set aside.
Melt the remaining butter in the skillet. Scramble eggs. Add salt and pepper to taste.
When eggs are finished cooking stir in the sausage and pepper mix. Add tomato. Garnish with sliced green onion if desired. Serve.
