Pairing Polish sausage with eggs is always an excellent choice and it creates a delicious option perfect for any meal of the day.

Removing the vegetables and polish sausage from the skillet prior to scrambling the eggs prevents the vegetables and sausage from getting coated with the egg. This will allow the egg, vegetables, and polish sausage to retain their individual flavors while still collaborating to make a delicious dish. Not to mention, it gives the skillet a cleaner, brighter, more appetizing appearance.

Omit tomatoes in this dish if desired, however they add a sweet, freshness, plus a nice pop of color.

Polish Sausage and Egg Scramble

  • 1 14 oz package Polish Sausage (Polska Kielbasa) sliced
  • 12 eggs beaten
  • 1 green bell pepper diced
  • 1 cup red onion diced
  • 1/2 roma tomato diced
  • 4 tbsp butter
  • 1 tbsp black olives chopped
  • 1 tsp garlic minced
  • salt and pepper to taste


  1. Melt 2 tbsp butter in large skillet over medium heat. Add peppers, onion, olives and garlic. Cook until peppers and onions are tender, add sausage. When sausage is cooked through pour sausage and pepper mix into a bowl and set aside.

  2. Melt the remaining butter in the skillet. Scramble eggs. Add salt and pepper to taste.

  3. When eggs are finished cooking stir in the sausage and pepper mix. Add tomato. Garnish with sliced green onion if desired. Serve.
