One afternoon I had a vision of arugula and steak wrapped up in a delicious little package. After some experimenting I added a simple sour cream horseradish sauce and some caramelized onions to balance out the peppery tones of the arugula and horseradish. For presentation tie a blade of chives around your steak roll.

Steak Wrapped Arugula Rolls

Peppery arugula, sweet caramelized onions, and spicy horseradish work together perfectly on these steak roll ups.

Ingredients

  • 1 lb extra thin sliced bottom round cut into approx. 1 in wide strips
  • 1 c onion thin sliced
  • 2 tbsp butter
  • 1 tbsp sour cream
  • 1 tsp horseradish
  • arugula
  • chives full blades
  • salt
  • pepper

Instructions

  1. Season steak with salt and pepper to taste. Sear steak over medium high heat. Takes approximately 1 min or less per side per slice due to the extra thin cut. Remove from heat and set aside.

  2. Melt butter in skillet over medium to medium low heat. Add onions and cook, stirring frequently until onions become golden brown. If onions brown faster on the edges turn the heat down a bit. Once caramelized, remove from heat and set aside.

  3. In a small bowl combine sour cream and horseradish.

  4. To assemble each steak roll, lay one strip of steak on plate, place a small bunch of arugula in the middle of the steak strip, top with onions and a small dollop of horseradish sauce. Overlap the ends of the steak together to make a roll then tie it closed with a blade of chives to hold it all in place.
