Strawberry Chicken Spinach salad with Almonds and Balsamic Vinaigrette
Strawberry chicken spinach salad comes together as a sweet, tangy, keto lunch, perfect when you’re in the mood for a variety of flavors and textures in one dish.
Every now and then I crave a salad. Not your regular run of the mill lunch meat with cheese and lettuce salad though. Sure you can dress that up with a hard boiled egg and some avocado, but it gets pretty monotonous if that’s the only type of salad I’m getting.
Instead, I want something that has a little bit different flavor profile. A strawberry chicken spinach salad does the trick. The juxtaposition of strawberries with red onions is a good start. Then dressing up the salad with more substance by adding spinach, chicken, sliced almonds, and feta cheese bring it around to a full meal.
No salad is complete without a dressing of some kind, and I just so happen to think a balsamic vinaigrette goes perfectly with every single other component of this salad.
What else do you add to your strawberry spinach salad? Personally I want to give this one a try by swapping bacon for the chicken. It would make for an interesting flavor change, possibly for the better.
