An excellent broth based soup for when you're feeling under the weather or as a starter for any meal.
Bring broth just to a boil, not a rolling boil.
Add soy sauce, sesame oil and sea salt.
Add xanthan gum by gradually adding the powder while stirring to avoid clumps.
Scramble the uncooked eggs and slowly pour them into the broth while slowly stirring.
Serve soup and garnish with chives or green onion, if desired.
