Add all ingredients to a small saucepan and whisk constantly over medium low heat. Once sauce reaches desired consistency remove from heat and cool. Pour into container and store in refrigerator.
Get your tasting spoons out and adjust your sweetener or cacao powder to your personal preference. If it gets too thick, just thin it out with a bit of water.
When adding xanthan gum make sure you are whisking constantly to avoid clumping. You may also want to mix the sweetener, cacao powder and xanthan gum in a small bowl prior to adding to the water.
Xanthan gum is added to this recipe to help thicken it up faster/easier. Feel free to omit if you don't have this ingredient on hand, but it may take a bit longer on the heat to evaporate the syrup to your desired consistency.
