Lemon pepper shrimp skewers on the grill provide a little sweet and a little heat and a whole lot of flavor.
Soak wooden skewers in advance if using. Peel and devein shrimp if needed.
Combine lemon juice, olive oil, salt and pepper in a small bowl. Reserve 1/4 cup of marinade if desired. Pour marinade over shrimp. Refrigerate shrimp for no more than twenty minutes.
Thread shrimp on skewers. Grill on medium temperature for 3 to 5 minutes per side being careful not to over cook.
Brush reserved marinade on grilled shrimp if desired.
