Wisconsin Cheese Soup

A creamy cheese soup to enjoy as a meal starter, or as a meal on it's own.

Ingredients

  • 2 cups chicken broth
  • 2 cups heavy whipping cream
  • 2 cups Wisconsin sharp cheddar shredded
  • 1 carrot diced
  • 1/2 cup celery diced
  • 1/2 cup onion diced
  • 1/2 cup mushrooms diced
  • 4 tbsp butter
  • 1 tsp xanthan gum
  • 1/2 tsp ground mustard
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

Instructions

  1. Melt butter in the bottom of a soup pot, cook carrot, celery, onion, and mushrooms until carrots are tender. Sprinkle xanthan gum over vegetables being careful not to add too much in any one spot. This will prevent clumping.

  2. Add broth, cream, cheese, and remaining spices to the soup. Stir until cheese is melted. Serve.
