A Polish Sausage and Egg Scramble is flavor-filled and an excellent choice for breakfast, lunch, or dinner.
Melt 2 tbsp butter in large skillet over medium heat. Add peppers, onion, olives and garlic. Cook until peppers and onions are tender, add sausage. When sausage is cooked through pour sausage and pepper mix into a bowl and set aside.
Melt the remaining butter in the skillet. Scramble eggs. Add salt and pepper to taste.
When eggs are finished cooking stir in the sausage and pepper mix. Add tomato. Garnish with sliced green onion if desired. Serve.
